  • I recommend using granulated salt not coarse type. If you must use iodized salt, decrease the quantity.

  • I recommend light brown sugar. You can use dark brown sugar but it will give warm, sweet, somewhat smoky flavor similar to bolder molasses taste.
  • You can choose your favorite variety of chocolate chips. Either semi-sweet or dark variety is good to go.

Steps in Baking {Instructions}

Now, let’s move on to the step-by-step instructions, but remember as I said earlier, this chocolate chip cookies are going to be gluten free.

Step 1: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

Step 2: In a medium-sized bowl, whisk together the gluten-free all-purpose flour, almond flour, tapioca flour, baking soda, and salt. Set aside.

Step 3: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This can be done using an electric mixer or by hand.

Step 4: Add the egg and vanilla extract to the butter and sugar mixture. Mix until well combined.

Freezing the recipes

This can be done in two ways:

  1. Freezing the dough prior to baking: The dough can be divided into portions and formed into balls. After that, put it on a baking sheet and quickly freeze the balls to make them rigid. When the gluten-free cookie dough balls have solidified, store them in an airtight container until you’re ready to bake.

When ready to bake, take the cookie dough out of the freezer and thaw it in the fridge overnight or at room temperature for two hours before proceeding with the recipe’s suggested baking time.  This is the way I like best because you can bake them right before you want to eat them.


  1. To freeze already baked cookies: Let baked gluten-free chocolate chip cookies cool to room temperature before freezing. After that, you can keep them in the freezer for up to two months in an airtight container.

Allow the gluten-free chocolate chip cookies to thaw by leaving them out at room temperature. They can also be warmed through in a baking dish covered with foil (or a lid) and placed in an oven set to 250 degrees F.
